In this recipe, we combine milk and buttermilk to create a rich, tender crumb, with a touch of melted butter for extra flavor. To add an autumnal twist, consider incorporating pumpkin spice into the mix for a seasonal touch.

Makes approximately 15 pancakes
2 cups flour
3 tsp baking powder
½ cup caster sugar
1 egg
1 ¼ cups milk
¾ cup buttermilk
75g melted butter, cooled (plus extra for cooking)

Prepare the Dry Ingredients: In a large bowl, mix together the flour, baking powder, and caster sugar.
Combine the Wet Ingredients: In a separate bowl, whisk together the egg, milk, buttermilk, and melted butter until well combined.
Make the Batter: Gradually add the dry ingredients to the wet mixture, stirring until just smooth. Be careful not to overmix; a few lumps are fine.
Cook the Pancakes: Heat a small amount of butter in a frying pan over medium heat. Pour approximately 1/3 cup of batter into the hot pan for each pancake. Cook until bubbles start to appear on the surface, then flip and cook for an additional minute, or until golden brown.
Serve: Stack the pancakes on a plate and top with fresh berries and generous drizzles of MGO 400 mānuka honey.
